Good condition Kampfe blades, not sharp. What is the best way to maintain the original edge profile while getting them up to speed?

Curious if these blades were factory honed with the spine lying flat or with some sort of handle like the ones that come in the sets. I want to sharpen them but don't want to flatten the angle or make it bigger. I'm not sure if I should use tape or the tool from the set to keep the factory angle and blade profile. Can anyone fill me in on that?

One of these is in pretty good shape, the other has a chip out of the edge. Both are dull. How low a grit should I go to to get rid of the chip? 1000?

Could the other blade be refreshed with the strop and white then green compound?

Seems I tripped over another rabbit hole.
