I have a few old DEs coming my way in the next few days, and am wondering if there's a good wiki post or thread about polishing. I already use scrubbing bubbles and what not, but have some polish that I'm not 100% sure how to use.

I'm sure alot of people here recommend MAAS. Never used it but I see it alot in threads. Hopefully someone more knowledgeable will come along soon 
I use Simichrome.
Try Some Flitz On A Cotton Rag~~ And If You Have Access To A Dremel?? Wholaa Just Like New....
Beware of power tools as the plating is very thin.........believe me.....
Weimans metal polish for me.
Safe for gold and silver plate,makes totally brassed Old Types and naked NEWs shine like the sun.
MAAS and some of the others can be bad for some of the gold and gold colored razors
