First Ever Prime Rib

Ours was two ribs, about 6.3 pounds. Dinner on Christmas Eve for five with a few having seconds, three cold roast beef sandwiches with butter and Chow Chow piccalilli yesterday, two good sized hot roast beef sandwiches today, probably two more tonight or tomorrow, and then a large pot of French onion soup. Getting good mileage from the indulgence!

I saved all the pan drippings in a jar. I haven’t decided what to make with it yet. French onion soup sounds nice and so does Yorkshire pudding.

Use the drippings for a Yorkshire pudding. Roast the bones to make broth for the soup. You get to have both!!!
