Fig cream vinegar

Today, I had the joy of discovering fig cream vinegar, while sampling vinegars at an oil and vinegar shop, at the mall. They had a lot of interesting flavors, like elderflower/apple/lime, and passion fruit, but the fig cream was without a doubt, the best vinegar that I have ever tasted! It's sweet, but not overly sweet, and tastes very complex. I'm not a fig person, but this stuff is divine, and I had to buy a bottle of it!

The question now, is what to do with it? It's delicious as a dipping sauce for bread, but I'm sure that there are some better uses.

It works well with mozzarella. I like it on an Italian style salad or antipasto.
