Besides the obvious difference in price, what's the functional difference in these two lines? I'm looking at them at Vintage Blades at the moment.
The "alleged" difference between carbon and stainless steel razors is a very touchy subject, which is probably why there haven't been many responses. I have very limited experience with stainless steel: two Dovo #41s, a Fritz Bracht from 1980 and one about a year old, and a Friodur. The Friodur is a good razor and I don't detect any differences from my other carbon steel razors but the Dovos have always given me trouble. They don't seem to hold an edge very well. That's my 2¢.
I agree that the Dovos are smooth as butter. What I meant to say is that, for me, the edge doesn't last very long compared to my other razors.I've had the opposite experience. For me, the "modern" Friodurs tend to be more touchy to get a smooth feeling edge, where the stainless Dovos I've had have always been smooth as butter.
