My favorite time of year for food. Tonight was roasted delicata squash (rings tonight). Olive oil, salt, pepper, vanilla powder (an experiment that worked)...425f, 20 minutes,, turn once.

Both the rings and the soup looks amazing. I'm going to look for delicata squash at the farmers market. I roasted acorn squash slices last night with some olive oil and a very light dusting of chili powder. Saved the seeds and toasted those in the oven while we cleaned up the kitchen.
Looks mighty tasty.
I roast it in olive oil with Brussels sprouts, mushrooms, fresh garlic, onion, salt and pepper. One of my favorites.

Looks good, I love any and all squash
It is very much a great time of year. Squash soup, pumpkin pie, stews, chicken pot pies, pot roasts, ack. I love it all.

I am doing that now. I picked up a lovely butternut squash.
