Cornbread Stuffing

My first thanksgiving at the in laws my mother in law’s tradition is tater tot sausage stuffing. No bread just those two ingredients. The tots are smashed. I ate it …..

Next year I asked if I could bring stuffing. I make 50/50 cornbread and sourdough. Celery, grated carrots, garlic, onion, chicken livers. It was a hit.

we drifted from my style and this year she had tater tot sausage stuffing again. It reminds her of her mom but I’m not a fan. I eat some out of respect but other sides get more love from me.

Looks good!!! I'm a fan of any cornbread dressin' that is not sage'd to death. My grandmother would put a ton in hers.... Yaaaccckkkk!
Depends on the sage. Too much dried sage sucks. It makes things taste medicinal. A lot of fresh sage is another matter in my belief. Of course even with fresh you can go overboard. I want a lot of toasted pecans in there, too.
