cool kitchen trick

One of our favorite things is my Smoked Stovetop Baked Potatoes, I have a specially designated pot to do this in. All you need is a large pot with a heavy lid that you can put a round cake cooling rack in.

I put a couple of tablespoons or so of smoking wood Oak, Cherry, or Hickory work great into the bottom of the pot. These can be bought at your local kitchen store these wood bits are very small

I put my potatoes in the pot on the baking rack over the wood bits, put the lid on and turn the heat on high on your stovetop. After about an hour you can peek, they are done when the skin gets a bit hard and crunchy.

We serve them with salt, pepper, butter, and mexican sour cream

Dig in for some crunchy, smoky goodness

By the way the left over potatoes microwave great

it can set off your smoke alarms or you can put them on the side burner of you BBQ outside also turn on your range hood to evacuate the escaping smoke if you have one
 
Do you puncture the skins? Just wondering if it would help it gather flavour or make it too much......or do nothing.
 
I just put the potatoes in the pot the skin picks up lots of flavor I've never had one split while baking it in the pot. I use is an actual stovetop smoker it has a drip pan and rack but the potatoes don't drip so that is not needed but you can smoke chicken or chops in it if you improvise a drip pan, I'm guessing a dutch oven would work or a big pot with a heavy lid
 
you can do small cuts of meat this way chicken etc just need to develope your timing :) stovetop smoker boxes / pots are available at many cooking stores
 
just found a cameron stovetop smoker new in the box at a thrift store for cheap so now we have two different style stovetop smokers :)
