One of our favorite things is my Smoked Stovetop Baked Potatoes, I have a specially designated pot to do this in. All you need is a large pot with a heavy lid that you can put a round cake cooling rack in.
I put a couple of tablespoons or so of smoking wood Oak, Cherry, or Hickory work great into the bottom of the pot. These can be bought at your local kitchen store these wood bits are very small
I put my potatoes in the pot on the baking rack over the wood bits, put the lid on and turn the heat on high on your stovetop. After about an hour you can peek, they are done when the skin gets a bit hard and crunchy.
We serve them with salt, pepper, butter, and mexican sour cream
Dig in for some crunchy, smoky goodness
By the way the left over potatoes microwave great
