Clean - Replate - Engrave? Clean - Engrave - Replate? What's the right sequence?

I want to give my son a 60s SS which was my father's and came to me after he passed away. Before I give it to him, I'd like to clean it up and have it replated and engraved (or engraved and replated?) with my dad's initials, my own, and his.

What's the correct sequence? Also, one of the butterfly doors is a bit "lazy" and if that can be put right as part of the process, I'd be glad.

(I'm probably also looking for a pointer to someone who does this type of work, but I'm pretty sure a search or two here should turn up that information.)

I'll let you know how it looks after it's been plated. My main concern about engraving on plating is exposing the brass/copper and risking corrosion down the road. However, I think (correct me if I'm wrong) the antique catalogs sets that Gillette's offered engravings for seem to be done with the plating intact.
I'm going to try to engrave on a nickel plated head to see how that comes out.
