Chrome Tanned vs Vegetable Tanned Leather Strops?

I think the only benefit the flesh side might have to a razor is it will clean the blade like linen, and keep the microscopic particles from building up on the smooth side. For stropping razors we usually only use the smooth side, plus linen if that is your thing.
That is exactly what I had in mind. My though was that I'd strop the flesh side first as it would (hopefully) function much like the linen or denim. Then I'd finish stropping on the harness leather.

I just got back from a business trip, and the leather I ordered was waiting for me on the doorstep. First....OMFG they sent me an obscene amount of that very soft leather. At least double what I ordered. Second....the harness leather they sent me is ridiculously glassy and smooth. I'm very curious to see how this will turn out!

(yes, because leatherworking is still very new to me, I'm very much in the "faff around and find out" stage where each project that I take on is an exercise in learning things the hard way)
