i was wondering, any chocolate experts know good brands of dark and milk block chocolate to works with ?

Valrhona.
Look for any small chocolate maker that roasts and grinds their own beans.
No good chocolate on this side of the pond, that I can assure you.
I use Merckens Yucatan (DARK) REAL CHOCOLATE
and Callebaut Belgian Chocolate - Single Origin Callets, "Bittersweet" Dark Chocolate blended together.
Valrhona, El Rey and Scharffenberger are my favorites.

El Ray's an awesome single origin for fruity flavors and has the best milk chocolate. Valrhona's great for rich blends, but I often prefer single origins. Scharffen Berger makes awesome cocoa. Michel Cuizel is a good choice when you want something less "blended" than Valhrona. And there's some amazing Belgian chocolates.
One secret when using good chocolate is to use less sugar. I find you can go with even less sugar when using a single origin or something like the Cuizel, and make up for it with other things. These just don't bloom with a lot of sugar, while the Valhrona does.
