Cheese anyone?

Not really making as such (I'd like to give it a shot some day though) but I do smoke my own. I just opened up a pack of mature cheddar that was smoked a month ago and has been ageing in the fridge. It's much sharper, quite crumbly and subtly smokey
 
I'm amazed more people don't at least make homemade mozz, its super easy and so delicious

How do you smoke your cheese? That is interesting!
 
Igasho, that's something I've been meaning to try, any recipe you'd recommend?

For the smoking I used a Pro Q cold smoke generator, I believe you can get them over the pond but there are a bunch of US equivalents. Just put the cheese in my BBQ (WSM style) light the sawdust and let the cheese sit there for 4 hours or so. I'm gonna try 6-8 hours next time as it mellowed so well (used 2:1 hickory to oak sawdust)
 
On this side of the pond a product called a-mazing smoker does the same thing, we use it for cheese, nuts, fish etc. I wouldn't mind trying to make my on mozz, I'm sure the wife would appreciate it!
 
No need as I live in Wisconsin and have access to some of the finest artisanal cheese in the world.

However, just like home brewing beer, it looks like a very interesting hobby.
 
The only cheese I make at home is fresh mozzarella... Its actually super easy and a lot of fun, something you can to get the kids involved or just impress a woman... Theres a bunch of videos on youtube and howtos all around the internet, I looked one up really quickly and this is almost exactly how I do it.
