Carnitas tonight. Like Chris, we're using leftovers for enchiladas later in the week.

Ah, Stephen, where are those pictures?
Just started the slow cooker. I'll post pictures either here or in What's Cooking of the meal. Love the carnitas, they've become a favorite.
Carnitas is basically pulled pork. It's cooked low and slow. I choose a crock pot for cooking.

Glad I decided to re-read the entire thread. Now the picadillo thread is bookmarked, too. Will be starting carnitas soon- might just start it tomorrow morning.Alright Mike You're like the 10th guy who has made this recipe since I originally posted. Can't wait to see the final product.
Now everyone needs to try making the Picadillo recipe. It didn't get as much love for some reason but extremely tasty.

Will try this weekend.Would someone make some carnitas please.
Nice. For serving the carnitas we toast up some corn tortillas, then put some refried beans down the center of each one. Top with the pork, then a cumin-lime slaw. We use this recipe, with some changes: Cumin Lime Coleslaw - Budget Bytes - https://www.budgetbytes.com/cumin-lime-coleslaw/. Instead of cabbage and carrots we use a broccoli slaw mix, and we use half mayo, half yogurt.
...you've been down South too long.
