Unacceptably Lasering Chicken Giblets?
The wife and I are both working 8 days straight starting Thursday so we decided to BBQ enough meat to get us through. Even enough for a couple of double shifts each.
Only missing 5 lbs of fajitas and a 15lb brisket.

All that plus 5 lbs of fajitas and 15 lbs of brisket for 2 people for 8 days? You may like meat even more than I.

You should see it when the whole family gets together!
And I promise you at least 3 other families on our street had fired up their pits too.

Makes me wanna roll mine out of the garage tomorrow.....lol

funny thing is that most people across the country are just putting their pits away for the winter. Here, it is finally cool enough to fire up the pits. We had a front blow in early this morning and it got down to about 70 degrees. Supposed to be about 50 at wake up and then in the high 70's. And guys at work will be wearing jackets.

I just put the brisket on and it will cook fat side up at about 175 degrees until I get up in the morning and bring it inside to cool and put it on my mesquite cutting board to slice it up.

Well, us Michigan boys still know how to lay down a nice smoke ring!


BTW, that cutting board is frickin' awesome!

What is your wood of choice on brisket? I think I used oak and pear for that brisket.

We only use mesquite.
we have as much as the workers can cut on the ranch and it's free.
Also, we buy 50 lb bags of Mexican charcoal. Basically it's chunks of mesquite that is fired for a while and then the fire is put out. Then it cools and hardens. It burns hot and long.
$6 for a 50lb sack.
I put 6 dried mesquite logs on the pit after I cooked all of the other food and then put the brisket on the other side to smoke.
It will burn all night.

Looks like good eats for a while.
 
Nice pit Marty!! Y'all have a great "long" week...........I know you will be eating well. I too, am really enjoying the cooler weather.....finally getting into the 70's!

All of the meat tasted pretty good.
I just now took the brisket off the pit.
 
What kind of smoker is that? I've been looking at a horizon one for a while now and this makes me want to pull the trigger.

Just 24" diameter pipe and I think it is about 3 feet or so long.
