As a fragrance ages, what really happens?

I have a bottle of Old Spice cologne from between the years of 1997 and 2000.

The top note is very strong, spicy and warm. I'm not good at describing scents but it's either cinnamon or cloves...
The color of the juice had become a light brown over the years

I love it.

But after about 6 hours, it settles to the point where it smells EXACTLY like a brand new bottle.
I experimented with it by covering one arm with each. I couldn't tell which was which.

Is it possible to enhance the top note of a new bottle of cologne by adding cinnamon or clove oil?
