Instapot from initial meat prep to fork separating takes ~75 minutes (and on the bun & in mouth ~1 sec. later).
How do you match that time with a cooker & smoker?

Smoking takes longer but on a 12 hour cook, there's maybe an hour of work total including cleanup I pick a day when when I plan to be home for the most part to put barbecue on the menu. In fact, I get a lot of other stuff done on days I smoke: clean the garage, cut/trim/blow the lawn, prune the bushes, clean the pool, oh... and drink some beer. The meat is done when it's done. Why would I try to make it hurry when I'm so productive? Fill the cooker and I have ready in an hour vacuum pack meat for when I don't have all day.
