...why distilled water, if I can?

An old shaving trick....Some water is very "hard" , you may get better lather using distilled water, not for washing your face, but just for the brush soaking.

...why distilled water, if I can?

"Hard" water is laden with minerals, mainly calcium compounds that diminish soap lathering. Distilled water has all of these mineral removed. Have you ever gone to a friends home who has a water softener & noticed the slippery feel after washing your hands with soap there? Distilled water will do the same to enhance your shaving lather.
