Had a great day fishing on Sunday, so last night I made blackened flounder topped with etouffee, some spicy boudin and cajun spiced creamed spinach. I didnt make the boudin, but everything else was from scratch.

They ate potatoes 3x a day and carrots at least once.
tonight was San Marzano tomatoes simmered with capers and garlic the mixed with spaghetti noodles and fresh grated Pecorino Romano and fresh basil from our "serenity garden".

Will be having for at least 2 more days. The broth is more gravy now.
Not eggplant Parm and not lasagna...layers of thin eggplant, ricotta with egg and nutmeg, marinara, and grated Parm on top. The marinara has lots of olive oil and onion, crushed garlic, salt and pepper, dried oregano, peperoncino, San Marzanos, and the tiniest splash of red wine vinegar. I could make a meal of the sauce alone.
Win dixie ran a sale and got some ribs for 1.98 lb, so threw them on the camp chef smoker and had some for dinner.
Cut off the small end for my wife, and baked that over saurkraut w br sugar with ribs on top.
