How to build an Armadillo egg in 10 photos

It's going to be a while before I'm in a position to BBQ, but just looking at those photos was like having a fantastic dinner. Thanks Jim!
 
I just made a version of this a couple of days ago when the smoker was on:

halved jalapeno's boats filled with the cream-cheese-sausage mixture.

Verdict? it's just not the armadillo egg!
 
Those do look awesome, Jim. I will add that to the repitoire. We do those peppers with shrimp inside and wrapped in bacon. On the pit until bacon cooks. Try the peppers at walmart, they are usually huge.

Tasty indeed!
The first knife shown is an Ichimonji 240 mm White#1 Gyuto with a custom handle I imported directly from Japan from the company.
The knife shown at the end is a Konosuke 150mm white#2 Petty. They are not in the group buy, but Jon can get both on special order.
