Thank you for your very detailed response. I have a vfd on my lathe so can run it very slowly, and now you've got me thinking CA might be worth trying... I guess I can always sand it out if it's a disaster and go with Poly.

Another option would be to use boiled linseed oil and ca. I've not done it but there are a bunch of pen turning video on youtube where they have done it. more of a natural finish instead of the gloss.
